Roasted chicken with lemon potatoes cooked in Dutch oven

Ingredients

  • 1 whole Chicken about 2 pounds
  • 2 pounds Potatoes
  • 1 cup Greek Olive Oil
  • 3 Garlic Cloves peeled
  • 2 medium Lemons freshly squeezed
  • 2 Bay Leaves
  • 2 1/2 cups Water
  • 2 tsp Oregano
  • A Pinch of Salt
  • A Pinch of Pepper
  • Greek Olive Oil for brushing

Directions

Rinse the chicken and drain. Brush with olive oil, sprinkle with some oregano and season with salt and pepper inside out.


Peel the potatoes, rinse, drain and cut them into chunks.


Preheat the oven at 450 degrees F.


We put in a Dutch oven the potatoes, all the remaining ingredients, except for the chicken and mix to evenly coat them with all the liquids.


Then add the chicken and cover the pot with its lid. Bake in the preheated oven for about 1 1/2 hour, until both chicken and potatoes are tender


Remove the lid and continue baking for another 10 minutes, until they brown


Remove pot from the oven, cut chicken in pieces and serve.
