Horiatiki (Greek Salad)

Ingredients

  • 2 medium Tomatoes
  • 1 medium Red Onion
  • 1 Green Bell Pepper
  • 1/2 medium Cucumber
  • 4-5 Barley Rusks
  • 1/2 cup Olives black
  • 1/2 cup Feta Cheese crumbled
  • 1/2 tsp Pepper
  • For cucumber sauce:
  • 1/2 medium Cucumber
  • 1/2 Lemon Juice freshly squeezed
  • 1/2 cup Greek Olive Oil
  • 2 tbsp Parsley finely chopped
  • 2 tbsp Capers
  • 1/2 tsp Oregano
  • A pinch of salt

Directions


Rinse the tomatoes, pat them dry and cut them into wedge-shaped pieces.


Peel the onion and cut it into big chunks.


Then we remove the stem and the seeds from the pepper, rinse, strain and cut into round slices.


Now we are ready to assemble the salad: place all the above vegetables into a salad bowl, add the feta cheese, croutons and mix.


Into a small bowl, mix the olive oil, vinegar, salt and pepper to taste and combine.


Pour this mixture over the "horiatiki , sprinkle with oregano and serve.
