Fava (Split Peas) with Capers

Ingredients

  • 1 pound Split Peas
  • 1/2 cup Capers
  • 5 cups Vegetable Stock
  • 1/2 cup Whole Blanched Almonds crushed
  • 4-5 tbsp Greek Olive Oil Pure
  • 1 medium Red Onion finely chopped
  • Greek Olive Oil for drizzling

Directions

Before starting, we have to soak the split peas in water for about 30 minutes. This way they will boil faster.


Strain the split peas, put them in a pot, add the stock and bring to a boil. Reduce to low heat and simmer for about 40 minutes, until soft. Skim the froth from the surface when needed. We can add some boiling water if needed.


In a hot frying pan stir onion to sauté, until caramelized and add it to the pot.


Pour in the olive oil, add the almonds, pepper to taste and stir to combine. Continue simmering for about 15 more minutes.


In the meantime, soak the capers in a bowl with water for 10 minutes. Rinse and strain.


Remove pot from heat. Put half of the split peas mixture into the blender's bowl, add the capers and pulp them.


Put the remaining split pea mixture into a bowl, add the one from the blender's bowl and mix to combine.


Serve the "fava" drizzling over it some olive oil and garnishing with capers.
